Instructions
1-Prepare the coconut rice first: Mix jasmine rice or long-grain white rice with coconut milk, a pinch of fine sea salt, and a hint of sugar, then cook according to package instructions or until fluffy and creamy.
2-Heat 1 tablespoon of olive oil in a large sautΓ© pan over high heat. Add the white parts of the 3 scallions, 4 cloves of minced garlic, and 1 1/2 tablespoons of fresh ginger, sautΓ©ing for 1-2 minutes until fragrant.
3-Add 1 1/2 pounds of ground pork and break it up with a wooden spoon, cooking until it is no longer pink, which takes about 5-7 minutes.
4-Stir in 1/3 cup of packed light brown sugar, 3 tablespoons of lime juice, and 1 tablespoon of sriracha. Let the pork cook undisturbed for 2 minutes to caramelize, then stir and repeat for 1-2 more minutes until it gets a sticky, golden texture.
5-Season with fine sea salt, freshly ground black pepper, and extra sriracha or lime juice if you want more kick.
6-Serve the pork over the prepared coconut rice, topped with chopped peanuts, scallion greens, fresh herbs like cilantro or mint, and lime wedges for a fresh finish.
