Ingredients

– 2 teaspoons baking powder

– 1 1/4 cups whole plain Greek yogurt, brought to room temperature

– 2/3 cup olive oil (regular or light olive oil recommended; vegetable or canola oil can be used as substitutes)

– 3 large eggs, brought to room temperature

– 2 teaspoons vanilla extract (vanilla bean paste can be used as an alternative)

Instructions

1-Preheat oven: Preheat oven to 350 degrees Fahrenheit. Spray a 9-inch springform pan with non-stick spray, line the bottom with parchment paper, and spray the parchment paper. Set aside.

2-Whisk dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3-Whisk wet ingredients: In another bowl, whisk together the sugar, yogurt, olive oil, eggs, and vanilla extract until well blended.

4-Combine mixtures: Pour the flour mixture into the wet ingredients and stir until combined.

5-Prepare batter: Pour the batter into the prepared pan and spread it into an even layer.

6-Bake: Bake until a toothpick inserted into the center comes out clean or with a few moist crumbs, about 33 to 36 minutes.

7-Cool and serve: Let the cake cool slightly before slicing and serving. Optional toppings include sweetened Greek yogurt, fruit curd, honey, fresh fruit, vanilla ice cream with caramel or chocolate sauce, or pie filling.
