๐Ÿฐ Enjoy a moist and tender yogurt cake that’s simple to make and perfect for any occasion.
๐Ÿฅ„ This recipe uses wholesome ingredients to create an easy homemade dessert with delightful texture and flavor.

  • Total Time: 55 minutes
  • Yield: 8-10 servings

Ingredients

– 1 3/4 cups unbleached all-purpose flour

– 2 teaspoons baking powder

– 1/4 teaspoon baking soda

– 1/2 teaspoon salt

– 1 cup granulated sugar (optionally increase to 1 1/4 cups for a sweeter cake)

– 1 1/4 cups whole plain Greek yogurt (room temperature)

– 2/3 cup olive oil or light olive oil (vegetable or canola oil are alternatives)

– 3 large eggs (room temperature)

– 2 teaspoons vanilla extract

Instructions

1-Preheat your oven to 350ยฐF (175ยฐC) to get things started on the path to a perfect bake.

2-Prepare a 9-inch springform pan by spraying it with non-stick spray, lining the bottom with parchment paper, and spraying the paper again for easy removal.

3-In one bowl, whisk together the 1 3/4 cups unbleached all-purpose flour, 2 teaspoons baking powder, 1/4 teaspoon baking soda, and 1/2 teaspoon salt until well combined.

4-In another bowl, whisk together the 1 cup granulated sugar, 1 1/4 cups whole plain Greek yogurt, 2/3 cup olive oil, 3 large eggs, and 2 teaspoons vanilla extract until the mixture is smooth and blended.

5-Gently add the dry ingredients to the wet ingredients and stir just until combined, avoiding overmixing to keep the cake light and moist.

6-Pour the batter into the prepared pan and spread it evenly for uniform baking.

7-Bake for 33 to 36 minutes, or until a toothpick inserted in the center comes out clean or with moist crumbs, signaling a perfect yogurt cake.

Notes

๐Ÿง Use whole milk Greek yogurt for richer texture; select brand based on preferred fluffiness.
๐ŸŒฟ Avoid extra virgin olive oil to prevent overpowering flavor; use light or regular olive oil instead.
๐Ÿ‹ Try variations by adding fresh blueberries, lemon zest, or substituting yogurt with vanilla Greek yogurt or sour cream.
