1 1/2 teaspoons finely minced eschallots or shallots
1/2 teaspoon finely minced garlic
1 tablespoon white wine vinegar
3 tablespoons extra virgin olive oil
3/4 teaspoon cooking or kosher salt
2 pinches white pepper
1 1/2 tablespoons finely sliced fresh basil leaves
Instructions
1-First, wash and dice the ripe tomatoes into even wedges for the best texture aim for 8-10 per tomato to let the flavors blend nicely.
2-Then, peel and finely mince the garlic using a knife to release its full punch.
3-In a large bowl, place the tomato wedges and sprinkle the minced eschallots, garlic, salt, and pepper right on top for better infusion.
4-Next, drizzle on the olive oil and vinegar, then gently toss everything to coat evenly.
5-Add the sliced basil and give it one more toss to mix it all in.
6-Let it sit for a moment if you like, but serve right away to enjoy those juicy flavors at their peak.
