2 cans white beans (such as great northern, cannellini, or butter beans)

3 cups vegetable broth or chicken broth

1 can (15 oz) fire roasted diced tomatoes

1 teaspoon lemon zest

Instructions

1-First, prepare all your ingredients by rinsing the beans, chopping the onion and tomatoes, and mincing the garlic. Having everything ready makes cooking smoother and faster.
