4 teaspoons active dry yeast

1/2 cup warm water

2 cups milk, scalded and cooled to lukewarm

1/2 cup sugar plus 1 teaspoon (separated)

3 tablespoons unsalted butter, melted and cooled slightly, plus additional melted butter for brushing

7 to 8 cups all-purpose flour

2 large eggs

2 teaspoons salt

1/2 cup unsalted butter, room temperature

1/4 cup confectioners’ sugar

1/4 cup honey

1 teaspoon cinnamon

Instructions

1-Using a dough hook, blend in the scalded and cooled milk, the remaining 1/2 cup sugar, and enough flour to make a medium batter.

2-Add the melted butter, eggs, and salt; beat everything well until combined.

3-Mix in enough flour to form a soft dough, then turn it onto a lightly floured surface and let it rest for 10 minutes.

4-Knead the dough until it’s smooth and satiny, place it in a greased bowl, cover with plastic wrap, and let it rise in a warm spot until doubled, about 1 to 1.5 hours.

5-Punch down the dough, roll it into a 1/2-inch thick rectangle, fold in half to about 1 inch thick, seal the sides, and rest for another 10 minutes.

6-Cut the dough into rolls, place them on a greased baking sheet, cover with a damp towel, and let them rise until doubled, about 1 hour.

7-Preheat your oven to 350Β°F (175Β°C) and bake the rolls for 10-15 minutes until lightly browned.

8-Finish by brushing the tops with melted butter right after baking for that extra shine and flavor.
