Instructions
1-In a large bowl, combine mashed sweet potatoes, eggs, milk, brown sugar, and 1 tablespoon maple syrup. Whisk until smooth.
2-Sprinkle the flour, baking powder, cinnamon, salt, and nutmeg over the wet mixture.
3-Stir the dry ingredients into the wet mixture until just combined and smooth.
4-Add the melted butter and mix gently until incorporated.
5-Heat a large nonstick skillet over medium heat. Add a small pat of butter and let it melt.
6-Drop β cup portions of batter onto the skillet.
7-Cook for 2 to 4 minutes, or until bubbles form and pop on the surface.
8-Flip the pancakes and cook for another 2 to 3 minutes until golden brown.
9-Repeat steps 5-8 with the remaining batter, adding more butter to the skillet as needed. The recipe makes approximately 8 pancakes.
10-Serve the pancakes warm, drizzled with additional maple syrup.
