πŸ§€ This rich dip combines tender mushrooms with smooth cheeses, creating a crowd-pleasing appetizer that’s easy to prepare.

  • Total Time: 45 minutes
  • Yield: 8 servings

Ingredients

– 8 oz baby bella mushrooms

– 2 tbsp avocado oil (can substitute any neutral oil or butter)

– 4 cloves garlic, minced

– 1 tsp fresh thyme or 1/4 tsp dried thyme (substitute fresh parsley if needed)

– 1/2 tsp salt (kosher or sea salt)

– 8 oz softened cream cheese

– 1/2 cup full fat Greek yogurt (can substitute sour cream for keto version)

– 1 cup shredded parmesan cheese, divided into two 1/2 cup portions

Instructions

1-Preheat your oven to 350 degrees Fahrenheit to get ready for baking.

2-Clean the mushrooms, remove their stems, and slice them into even pieces.

3-Mince the 4 cloves of garlic to add that fresh punch to the mix.

4-Heat 2 tbsp avocado oil along with the minced garlic and 1 tsp fresh thyme (or 1/4 tsp dried thyme) in a skillet over medium-low heat for about 3 minutes until soft and fragrant.

5-Add the 8 oz sliced baby bella mushrooms and cook, stirring often, for about 7 minutes until they soften slightly.

6-Season with 1/2 tsp salt, then remove from heat and let the mixture cool a bit.

7-In a separate bowl, mix 8 oz softened cream cheese, 1/2 cup full fat Greek yogurt, and 1/2 cup shredded parmesan cheese until smooth.

8-Combine the cheese mixture with the cooked mushrooms, then transfer to a baking dish and top with the remaining 1/2 cup shredded parmesan cheese.

9-Bake for 15 minutes, then broil for 5 minutes until the cheese is browned and bubbling.

10-Take it out of the oven and serve warm with options like toasted baguette slices, crackers, or fresh veggies.
