– 1 lb (450g) potatoes
– 1/4 green bell pepper
– 1/4 red bell pepper
– 3 garlic cloves
– 1 tsp (4g) grated ginger
– 3 green onions, divided (whites and greens separated)
– 3 tbsp neutral-tasting oil, divided
– Kosher salt, to taste
– 1 lb (450g) ground beef
– 1/2 tbsp sesame oil
– 3 tbsp soy sauce
– 1 tbsp oyster sauce
– 1.5 tbsp sugar
– 1 tsp rice vinegar
– 1/2 tsp paprika (optional, for color)
– 2 tbsp cooking wine (or mirin, dry sherry, water, etc.)
– Black pepper, to taste
– 1/4 cup (60ml) water
– 1 tbsp cornstarch
Instructions
1-Prepare your ingredients: Start by prepping your ingredients to make the process smooth. Youโll need to cut the potatoes and bell peppers into small cubes, chop the garlic, grate the ginger, and slice the green onions, separating the whites and greens.
2-Mix the sauce: Next, mix up the sauce in a bowl: combine 3 tbsp soy sauce, 1 tbsp oyster sauce, 1.5 tbsp sugar, 1 tsp rice vinegar, 1/2 tsp paprika if you like, 2 tbsp cooking wine, black pepper to taste, 1/4 cup water, and 1 tbsp cornstarch. Set this aside for later.
3-Cook the potatoes: Heat 2 tbsp of neutral-tasting oil in a large wok or pan over medium-high heat. Add the 1 lb potatoes, season with Kosher salt, and cook for 8 minutes until golden. Take them out and set aside.
4-Cook the beef: In the same pan, add the remaining 1 tbsp oil, then add the 1 lb ground beef. Spread it out and sear for 1 to 2 minutes until browned on the bottom.
5-Stir-fry the beef and aromatics: Flip the beef, break it up, and stir-fry for 3 minutes to remove any liquid and fat. Toss in the 3 chopped garlic cloves, 1 tsp grated ginger, and the white parts of the 3 green onions. Sautรฉ for 1 to 2 minutes. Add the seared potatoes and cubed bell peppers, stir-frying for 1 minute to coat everything in oil.
6-Finalize the dish: Pour in the sauce you prepared earlier and toss for 1 minute. Turn off the heat, stir in the 1/2 tbsp sesame oil, and mix well. Serve it up on a plate, garnished with the green parts of the 3 green onions, alongside hot rice. The total time is about 20-25 minutes, with 8 minutes for the potatoes and 8-10 minutes for the rest.
