2 pounds (1 kilogram) medium-sized potatoes with skin on (preferably Russets, Maris Pipers, or King Edwards)

2.5 tablespoons olive oil

1 teaspoon cayenne pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

3/4 teaspoon salt plus an extra pinch for serving

1/4 teaspoon black pepper

1/2 cup (120 grams) Greek yogurt

1/2 cup (120 grams) sour cream

1/4 cup finely diced chives

1/4 cup finely diced parsley

Juice of 1 lemon

1/8 teaspoon onion powder

1/8 teaspoon garlic powder

Salt and black pepper to taste

Instructions

1-First, preheat the oven to 200Β°C (390Β°F) and place a baking tray inside to heat. This step helps get that perfect crisp.

2-Next, slice the potatoes into approximately 1 cm thick disks and put them in a large bowl.

3-Then, add the olive oil, cayenne pepper, smoked paprika, garlic powder, onion powder, salt, and black pepper to the bowl. Mix everything well by hand until the potatoes are evenly coated. Arrange the slices spaced apart on the hot baking tray without overlapping to keep them from steaming.

4-Roast for 30 to 40 minutes until they’re golden and crispy, flipping halfway through. If they start to char before 20 minutes, adjust the oven temperature.

5-Finally, sprinkle with an extra pinch of salt before serving, and pair with the lemon herb dip if you like.
