1 cup yellow cornmeal
1 teaspoon Cajun seasoning
2 large eggs
1/2 cup whole buttermilk
Hot sauce to taste
Peanut oil or another high smoke-point oil for frying

Instructions
1-Wash and slice tomatoes, then pat dry.
2-Prepare the flour and egg mixtures.
3-Heat oil to the right temperature.
4-Dip and coat the slices evenly.
5-Fry in batches and drain excess oil.
6-Garnish and serve immediately.
