Ingredients

– 750g / 1.5lb skinless, boneless chicken thighs or chicken breast

– 1/2 teaspoon salt

– Black pepper to taste

– 1/2 cup sun dried tomatoes strips, drained of oil (preferably marinated in olive oil)

– 2 tablespoons oil from sun dried tomatoes jar

– 2 garlic cloves, minced

– 1/2 cup (125 ml) white wine (can substitute with chicken broth)

– 3/4 cup (185 ml) low sodium chicken broth or stock

– 3/4 cup (185 ml) thickened or heavy cream

– 1/3 cup (30g) finely shredded parmesan cheese (use finely grated or thin shreds)

– 2 teaspoons Dijon mustard (optional for slightly thickening sauce and adding acidity)

– 1 cup packed fresh basil leaves (optional)

Instructions

1-If using chicken breast, slice each piece horizontally into thin steaks.

2-Season the chicken with 1/2 teaspoon salt and black pepper to taste.

3-Heat 2 tablespoons oil from the sun dried tomato jar in a large skillet over high heat.

4-Cook the 750g / 1.5lb chicken until golden brown on both sides: about 6 minutes total for thighs or 4 minutes for breast.

5-Remove the chicken from the skillet and keep it warm.

6-Add 2 minced garlic cloves to the skillet and cook for about 15 seconds until lightly golden.

7-Pour in 1/2 cup (125 ml) white wine and bring to a simmer, scraping the pan to loosen browned bits.

8-Simmer the wine for 1 minute until the alcohol smell dissipates.

9-Stir in 2 teaspoons Dijon mustard.

10-Add 3/4 cup (185 ml) chicken broth, 3/4 cup (185 ml) thickened or heavy cream, 1/3 cup (30g) finely shredded parmesan cheese, and 1/2 cup sun dried tomatoes strips.

11-Bring the mixture to a simmer, reduce heat to medium, and cook for 2-3 minutes until the sauce thickens, stirring regularly to melt the parmesan.

12-Adjust seasoning with salt and black pepper to taste.

13-Stir in 1 cup packed fresh basil leaves if using.

14-Return the chicken to the skillet, spoon sauce over it, and simmer for 1 minute.

15-Serve immediately, recommended with mashed potatoes, pasta, or bread to soak up the sauce.
