  • Total Time: 1 hour 10 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

2 tablespoons olive oil

1 cup chopped yellow onion

1 pound 90% lean ground beef or ground lamb

2 teaspoons dried parsley leaves

1 teaspoon dried rosemary leaves

1 teaspoon dried thyme leaves

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1 tablespoon Worcestershire sauce

2 garlic cloves minced

2 tablespoons all-purpose flour

2 tablespoons tomato paste

1 cup beef broth

1 cup frozen mixed peas and carrots

1/2 cup frozen corn kernels

1 ½ to 2 pounds russet potatoes (about 2 large potatoes peeled and cut into 1-inch cubes)

8 tablespoons unsalted butter (1 stick)

1/3 cup half & half

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/4 cup parmesan cheese

Instructions

1-Getting your Shepherds Pie right: starts with gathering and prepping your ingredients. Begin by chopping onions and mincing garlic while you peel and cube the potatoes for the topping. This step sets the stage for a smooth cooking process that makes Shepherds Pie a breeze to whip up. Try this approach in other baked dishes like pumpkin pie bars for similar results.

2-Next, heat the olive oil in a large skillet over medium-high heat for about 2 minutes, then add the chopped onions and cook for 5 minutes, stirring occasionally until they soften. Add the ground beef or lamb along with dried parsley, rosemary, thyme, salt, and pepper, cooking for 6-8 minutes until the meat browns. Stir in the Worcestershire sauce and minced garlic, cooking for another minute to build flavor.

3-Mix in the flour and tomato paste until everything combines without lumps, then pour in the beef broth along with frozen peas and carrots, and corn. Bring it to a boil and simmer for 5 minutes, stirring occasionally. Preheat your oven to 400 degrees F while the mixture simmers. In a separate pot, boil the cubed potatoes until they’re fork-tender, about 10-15 minutes, then drain them and return to the pot to evaporate excess liquid.

4-Add butter, half & half, garlic powder, salt, and pepper to the potatoes and mash until smooth, then stir in the parmesan cheese. Pour the meat filling into a 9×9 or 7×11 inch baking dish, spreading it evenly. Top it with the mashed potatoes, smoothing the surface, and place the dish on a rimmed baking sheet to catch any spills. Bake uncovered for 25-30 minutes until the meat bubbles and the potatoes turn golden, then let it cool for 15 minutes before serving. This method ensures your Shepherds Pie comes out perfectly every time, with a crispy top and flavorful base. For more on lean meats, check out benefits of lean beef.
