Ingredients

– 4 fully-cooked chicken sausage links (about 12 oz)

– 1 red bell pepper

– 1 small red onion

– 1 head of broccoli

– 1 sweet potato (about 1/2 lb)

– 3 tablespoons olive oil

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 1/2 teaspoon garlic powder

– 1 1/2 teaspoons dried oregano

– 1 tablespoon chopped parsley (optional)

Instructions

1-First, preheat your oven to 425ยฐF as this is the best temperature for even cooking. Slice the chicken sausage into diagonal medallions and chop the red bell pepper into 1-inch chunks. Then, slice the onion into 1/2-inch pieces and cut the broccoli into small florets.

2-Next, wash, peel, and dice the sweet potato into 3/4-inch cubes. Combine all the sausage and vegetables in a large bowl. Drizzle with 3 tablespoons of olive oil and season with 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, and 1 1/2 teaspoons dried oregano, then toss to coat evenly.

3-Spread the mixture onto a parchment-lined baking sheet in a single layer. Roast for 15 minutes, stir the ingredients, and return to the oven. Roast for another 15 minutes until everything is browned on the edges. Finally, garnish with 1 tablespoon chopped parsley if you like, and serve hot for a warm, flavorful meal.
