Ingredients

– 1 tablespoon vegetable oil (optional)

– 5 ounces Mexican chorizo, casings removed

– 12 ounces grated cheese such as Monterey Jack or Oaxaca (about 2 ยฝ cups)

– 6 flour tortillas or 12 ounces tortilla chips for serving

– 1 ยฝ cups roasted salsa

Instructions

1-Preheat the oven: Preheat the oven to 350 degrees Fahrenheit to get things started on the right note.

2-Cook the chorizo: Heat a skillet over medium heat and add 1 tablespoon vegetable oil if desired, then cook 5 ounces of Mexican chorizo with casings removed, stirring frequently for about 6 to 7 minutes to avoid sticking.

3-Drain excess fat: Remove excess fat by draining the cooked chorizo on a paper towel, which helps keep your dip from getting too greasy.

4-Assemble the dish: Place the chorizo in an ovenproof dish, reserving 2 tablespoons for garnish, and spread 12 ounces of grated cheese like Monterey Jack or Oaxaca evenly over it.

5-Bake: Bake in the oven for 10 to 12 minutes until the cheese is melted and bubbling, making sure not to overcook for the best texture.

6-Serve: Remove from the oven and place on a heatproof surface, then serve warm alongside 1 ยฝ cups of roasted salsa and plenty of 6 flour tortillas or 12 ounces tortilla chips.
