Instructions
1-Preheat and Prepare: Preheat the oven to 350Β°F and prepare two loaf pans by greasing and flouring them to prevent sticking.
2-Mix Dry Ingredients: In a large bowl, whisk together the flour, cinnamon, salt, baking soda, and baking powder until well combined.
3-Mix Wet Ingredients: In a separate bowl, combine the eggs, vegetable oil, pumpkin puree, and sugar, stirring until blended.
4-Combine and Fold: Gradually mix the wet ingredients into the dry ingredients, stirring just until combined. Gently fold in the shredded zucchini and walnuts or chocolate chips if using, then pour the batter evenly into the prepared loaf pans.
5-Bake and Cool: Place the pans in the oven, reduce the temperature to 325Β°F, and bake for 40-50 minutes for 9Γ5-inch pans or 45-55 minutes for 8Γ4-inch pans, or until a toothpick inserted into the center comes out clean. Allow the bread to cool for 20 minutes in the pans before removing and letting it cool completely on a wire rack.
6-Add the Glaze: For the glaze, beat the softened cream cheese with powdered sugar, then gradually stir in light cream until you reach the desired consistency. Drizzle it over the cooled loaves for a tasty finish.
