🍫 Enjoy chewy, flavorful bars that combine the warmth of pumpkin spice with classic s’mores ingredients for a delightful dessert.

  • Total Time: 35 minutes

Ingredients

– ½ cup unsalted butter melted and cooled

– ½ cup packed light brown sugar

– ⅓ cup granulated sugar

– 1 teaspoon vanilla extract

– 1 large egg yolk

– 1 ½ teaspoons honey

– ⅓ cup plus 1 tablespoon pure pumpkin puree blotted to remove excess moisture

– ½ teaspoon pumpkin spice optional

– ¼ teaspoon baking powder

– ¼ teaspoon baking soda

– ½ teaspoon kosher salt

– 1 ⅓ cups all-purpose flour

– ½ cup dark chocolate chunks or 70% bittersweet chocolate

– 15 large marshmallows cut in half

– ¾ cup chocolate chips

– ½ cup graham crackers roughly crushed plus extra for topping

Instructions

1-Follow this simple step-by-step guide to make your Pumpkin Smores Bars turn out just right. First, preheat your oven to 350 degrees Fahrenheit and line a baking pan with parchment paper for easy removal. In a large bowl, whisk together melted butter, brown sugar, granulated sugar, and vanilla until combined for a smooth base.

2-Next, add the egg yolk, honey, and blotted pumpkin puree; whisk until the mixture is smooth and creamy. Stir in pumpkin spice if using, baking powder, baking soda, and salt to incorporate the leavening agents. Gently mix in the flour until evenly incorporated, then fold in chocolate chips and crushed graham crackers for that classic texture.

3-Press about three-quarters of the cookie dough evenly into the pan to form the base. Place marshmallows cut-side-down over the dough, covering most of the surface, and scatter chocolate chunks on top. Crumble extra graham crackers over the marshmallows, then break up the remaining dough into clumps and place on top, leaving spaces for marshmallows to peek through. Bake for 24 to 28 minutes until golden brown, and allow to cool completely on a wire rack before slicing.
