Instructions
1-Cooking the Pasta: First, bring a large pot of salted water to a boil and cook 1 pound of fettuccine until al dente, reserving 1 cup of pasta water before draining. This step ensures the pasta holds the sauce well without getting mushy.
2-Making the Sauce: Melt 6 tablespoons of butter over medium-low heat in a pan, then sautΓ© 2 minced garlic cloves until fragrant.
Stir in 1 cup of pumpkin puree, 2/3 cup of half and half, 1/2 cup of freshly grated Parmesan cheese, and 1/8 teaspoon of nutmeg.
Heat and stir the mixture until the cheese melts and the sauce turns smooth, then gradually add the reserved pasta water in 1/4 cup increments, about 1/2 cup total, to get that thick, creamy consistency.
Once the sauce is ready, toss the cooked pasta in it over medium-high heat for 1-2 minutes until everything is well coated. Serve it hot, garnished with 1 tablespoon of freshly chopped parsley and a bit more grated Parmesan if you like. For variations, you can swap butter for olive oil or use evaporated milk instead of half and half in the same amount.
