1 teaspoon baking powder

ยผ teaspoon kosher salt

1 pinch ground nutmeg

ยผ cup heavy whipping cream (60 g)

3 ounces vanilla yogurt

1 large egg

1 can (15.25 ounces) peaches, diced, with juice reserved for glaze

Vegetable or canola oil for frying

1ยผ cups confectionersโ€™ sugar (150 g)

ยผ teaspoon vanilla

36 teaspoons reserved peach juice (optional)

Instructions

1-In a separate bowl, beat ยผ cup heavy whipping cream (60 g), 3 ounces vanilla yogurt, and 1 large egg together until smooth.

2-Add the wet mixture to the dry ingredients and stir until just combined, then gently fold in the diced peaches.

3-Heat vegetable or canola oil in a frying pan to 375ยฐF, making sure to use a larger pan to prevent splattering.

4-Drop ยผ cup of batter slowly into the hot oil and fry for 2-4 minutes per side until golden brown.

5-Flip and fry the other side until fully cooked, then drain on a paper towel-lined rack and let cool.
