– 1/4 teaspoon fine salt, plus more to taste

– 5 oz (140 grams) cream cheese

– 1 oz (30 grams) freshly grated parmesan cheese, plus more for serving

– 1/4 teaspoon ground nutmeg or about 1/3 freshly grated nutmeg, according to taste

– Black pepper to taste

Instructions

1-First, bring a large pot of salted water to a boil and cook 8 oz (225 grams) of pasta until al dente, following package instructions, then reserve at least 1/2 cup of the pasta cooking water before draining.

2-While the pasta cooks, in a large skillet, heat 1 tablespoon of olive oil over medium heat and add 2 to 3 finely sliced or minced garlic cloves, sautΓ©ing for 1 to 2 minutes until fragrant.

3-Next, add 9 oz (250 grams) of washed baby spinach to the skillet in handfuls, season with 1/4 teaspoon fine salt, and stir until it wilts and turns bright green.

4-Stir in 5 oz (140 grams) of cream cheese and about 1/3 cup of the reserved pasta cooking water to create a smooth sauce, adjusting with more water if needed.

5-Add 1 oz (30 grams) of freshly grated parmesan cheese and 1/4 teaspoon ground nutmeg (or about 1/3 freshly grated nutmeg to taste), then mix well.

6-Drain the pasta and toss it immediately in the skillet with the sauce until fully combined.

7-Finally, serve right away, drizzled with extra olive oil, a sprinkle of black pepper to taste, and additional grated parmesan cheese.
