5 garlic cloves, finely minced

2 medium onions, chopped (or 1 large onion)

1 yellow capsicum, cut into 1.5 cm squares

1 red capsicum, cut into 1.5 cm squares

400 grams smoked sausages, sliced 0.5 cm thick (about 14 ounces or 3 sausages)

3/4 teaspoon salt

1/2 teaspoon pepper

3/4 teaspoon smoked paprika (or regular paprika)

1 1/2 cups long grain white rice (other white rice types can work with water adjustments)

2 1/2 cups low sodium chicken stock or broth (or vegetable stock)

2 cups frozen peas, thawed

2 tablespoons chopped parsley (optional)

Instructions

1-First, prepare all ingredients by chopping the onions, garlic, and capsicums as specified. In a large heavy-based pot, heat 2 tablespoons of extra virgin olive oil over medium-high heat and cook the sliced smoked sausages until golden, then set them aside. This step ensures the sausages get that nice caramelized flavor.

2-Next, add the remaining 1 tablespoon of olive oil to the pot and sautΓ© the garlic and onion for 2 minutes, then mix in the capsicums and cook for another 2 minutes until the onion is translucent. Add the uncooked rice, chicken stock, smoked paprika, salt, pepper, and the cooked sausages, stirring everything together before bringing it to a boil.

3-Lower the heat to a gentle simmer, cover with a lid, and cook for 20 minutes. Once done, remove from heat, add the thawed peas on top, cover again, and let it rest for 10 minutes so the peas cook with the residual heat. Finally, fluff the rice with a fork, stir in the chopped parsley if you like, and serve it hot for a complete one pot sausage and rice dinner recipe.
