Instructions
1-First, heat your oven to 400Β°F and prepare your ingredients by chopping the mushrooms and shallots finely. This sets the stage for a quick cook.
2-In a skillet, warm the additional tablespoon of olive oil over medium-high heat and sautΓ© the shallots and mushrooms until they brown, which takes about 5 minutes remember not to add salt yet to keep things from getting watery.
3-Once the veggies are ready, mix the 6 ounces of goat cheese with 1 tablespoon honey, 1 tablespoon olive oil, the Β½ teaspoon chopped thyme, and a bit of salt and pepper until itβs creamy. For the puff pastry, roll out the sheet on a floured surface to make it thinner, then cut 1-inch strips from the sides and use the egg wash to attach them as a border.
4-Transfer the pastry to a parchment-lined baking sheet.
5-Spread the goat cheese mixture inside the border and add the mushroom mix on top.
6-Brush the border with egg wash for a nice shine.
7-Bake for 20 minutes, then let it rest before serving.
