🍓 Enjoy a wholesome breakfast packed with nutritious oats and antioxidant-rich mixed berries for sustained energy.
🍯 This recipe offers a naturally sweet and satisfying vanilla flavor, perfect for a cozy morning treat.

  • Total Time: 45 minutes
  • Yield: 4 to 6 servings

Ingredients

– 2 cups (180g) old fashioned rolled oats

– 1 teaspoon baking powder

– ¼ teaspoon salt

– 1 large egg

– 1½ cups (360ml) milk (dairy or plant based)

– ⅓ cup (80ml) pure maple syrup

– 1½ teaspoons pure vanilla extract

– 1 tablespoon melted butter or coconut oil

– 1 scoop (30g) vanilla protein powder (optional)

– 2 generous cups (11oz) mixed fresh berries, larger berries chopped or sliced (frozen berries can be used, keep frozen and halve larger berries)

Instructions

1-Getting started: with mixed berry vanilla baked oatmeal is easier than you might think. First, preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish to avoid any sticking issues. Gather all your ingredients and measure them out accurately for a smooth process that saves time.

2-Next, in a large bowl, combine the 2 cups (180g) old fashioned rolled oats, 1 teaspoon baking powder, and ¼ teaspoon salt. Stir these dry ingredients well to make sure they’re evenly mixed. This step sets the foundation for the dish’s texture.

3-Then, in another bowl, whisk together the 1 large egg, 1½ cups (360ml) milk, ⅓ cup (80ml) pure maple syrup, 1½ teaspoons pure vanilla extract, 1 tablespoon melted butter or coconut oil, and 1 scoop (30g) vanilla protein powder if you’re using it. Blend until smooth and fully combined. Now, pour this wet mixture over the oats in the first bowl and stir gently to incorporate everything.

4-After that, fold in the 2 generous cups (11oz) mixed fresh berries, making sure they’re distributed evenly. Transfer the whole mixture to your prepared baking dish and top with any extra berries if desired. Gently shake the dish to help the liquid spread out evenly before baking.

5-Finally, bake uncovered for 25-30 minutes or until it’s set and has a nice golden top. It will firm up as it cools, so let it rest for a bit. If you’re looking for more hearty breakfast ideas, you might enjoy trying a recipe like vegetarian chili mac and cheese for variety.
