πŸ₯” Mississippi Mud Potatoes offer a rich, comforting casserole packed with flavors from bacon, cheese, and tender potatoes.
πŸ§€ This hearty dish combines classic baked potato ingredients with creamy mayonnaise for a decadent side or main that’s perfect for family meals or gatherings.

  • Total Time: 1 hour 10 minutes
  • Yield: 6 servings

Ingredients

– 3 pounds yellow potatoes peeled and diced (such as Yukon gold variety)

– 1 small yellow onion diced

– 2 teaspoons minced garlic (fresh preferred)

– 1 pound cooked and crumbled bacon (regular cut)

– 1 cup mayonnaise (or half mayonnaise and half sour cream for added tang)

– 1 cup shredded cheddar cheese (alternatives like pepper jack or mozzarella can be used)

– 1 teaspoon onion powder

– 1 teaspoon garlic powder

– Salt and pepper to taste (about 1/2 teaspoon each)

– 2 green onions sliced for garnish

Instructions

1-First, preheat the oven to 350 degrees Fahrenheit and coat a 9Γ—13-inch baking dish with nonstick spray. This step sets the stage for even cooking and prevents sticking.

2-Next, in the baking dish or a bowl, combine the 3 pounds of diced yellow potatoes, 1 small diced yellow onion, 2 teaspoons of minced garlic, 1 pound of cooked and crumbled bacon, 1 cup of mayonnaise, 1 cup of shredded cheddar cheese, 1 teaspoon of onion powder, 1 teaspoon of garlic powder, and salt and pepper to taste (about 1/2 teaspoon each). Stir everything together until it’s mixed evenly.

3-Then, cover the dish with aluminum foil and bake for about 1 hour, or until the potatoes are tender. This allows the flavors to meld and the potatoes to soften perfectly.

4-Finally, remove the foil, sprinkle the 2 sliced green onions on top, give it a light stir, and serve hot. For added flair, you can mix in extras like red pepper flakes for spice.

Notes

πŸ§„ Use fresh garlic for the best flavor; jarred garlic can be used in a pinch.
πŸ₯“ Freshly cooked bacon enhances texture and taste, but precooked bacon works as well.
🌢️ Add red pepper flakes, cayenne, jalapenos, or hot sauce for a spicy kick.
