Ingredients

– 1.5 pounds ground beef (80/20 recommended, though leaner options are possible)

– 1 medium yellow onion, chopped

– 3 cloves garlic, finely chopped

– 1 envelope taco seasoning

– 1 can (15.5 oz) black beans, drained and rinsed

– 1 can (14.5 oz) diced tomatoes

– 1 can (4 oz) diced green chiles

– ยฝ teaspoon salt

– ยฝ teaspoon ground black pepper

– 4 cups shredded cheddar cheese (sharp cheddar preferred; alternatives include Colby jack, Monterey jack, or Mexican cheese blend)

– 18 corn tortillas (6-inch)

– 1 tablespoon fresh cilantro, chopped

– 2 green onions (scallions), sliced

– Additional garnishes: diced tomatoes and sour cream (quantities as desired)

Instructions

1-Preheat the oven to 375ยฐF and grease a 9ร—13-inch casserole dish.

2-In a large skillet over medium-high heat, brown 1.5 pounds of ground beef for 5-6 minutes until mostly cooked.

3-Add 1 medium chopped yellow onion and 3 finely chopped garlic cloves, cooking for about 5 minutes until softened and fragrant.

4-Stir in 1 envelope of taco seasoning, ยพ cup water, 1 can (15.5 oz) drained and rinsed black beans, 1 can (14.5 oz) diced tomatoes, 1 can (4 oz) diced green chiles, ยฝ teaspoon salt, and ยฝ teaspoon ground black pepper. Simmer on medium-low for 5 minutes until the sauce thickens and coats the ingredients.

5-Spread 1 cup of the meat mixture evenly in the casserole dish.

6-Layer 6 corn tortillas (6-inch) on top, slightly overlapping.

7-Spread one-third of the remaining meat mixture over the tortillas, then sprinkle with one-third of the 4 cups shredded cheddar cheese.

8-Repeat the layering of tortillas, meat mixture, and cheese two more times.

9-Cover with foil and bake for 25 minutes.

10-Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.

11-Let the dish rest for 10 minutes before slicing. Garnish with 1 tablespoon chopped fresh cilantro, 2 sliced green onions, diced tomatoes, and sour cream before serving.
