– 1 lb kielbasa sausage, sliced ¼ inch thick and then each piece cut into 4

– 3 large peeled potatoes, diced into ½ inch cubes

– 1 cup diced onions

– 2 cloves of minced garlic

– 1 teaspoon seasoning blend

– 1 teaspoon pepper

– 1 cup chicken broth

– 1 cup heavy cream (alternatively light cream or half and half)

– Half of a 10.5 oz can of cheddar cheese soup

– 1 cup sharp cheddar cheese

– ½ cup water, added gradually as needed

Instructions

1-Preheat your oven: to 350°F (175°C) and lightly spray a 13 x 9 inch or 3-quart baking dish with non-stick cooking spray. This sets the stage for even baking and easy cleanup, something I always appreciate on weeknights.

2-Cook the kielbasa: in a large pot with about ½ cup of water, adding it gradually as the sausage browns over medium heat. Once the water evaporates and the sausage lightly browns, add the onions and cook for 3-4 minutes until they start to soften. Then, stir in the garlic for that extra aroma, cooking until the onions turn translucent.

3-Add the diced potatoes, chicken broth, heavy cream, half the cheddar cheese soup, seasoning blend, and pepper to the pot. Let the mixture simmer on low heat until it just begins to boil, then remove from heat and stir in the sharp cheddar cheese until it’s fully melted. Pour everything into your prepared baking dish, top with extra cheddar cheese if you like, cover with foil, and bake for 65-75 minutes until the potatoes are tender.

4-Once the baking time is up, remove the foil and bake uncovered for another 10 minutes to get that perfect golden top. Let it rest a bit before serving, and pair it with veggies or a salad for a complete meal. This method ensures a rich, creamy result that freezes well for future use. For a lighter version, swap the heavy cream with half and half or light cream just like I do sometimes.
