Ingredients

– 1/2 pound elbow macaroni (about 1 1/2 cups)

– 3 tablespoons butter

– 2 tablespoons all-purpose flour

– 1/2 teaspoon salt

– 1/8 teaspoon ground black pepper

– 1 1/2 cups milk (any kind)

– 3/4 cup half and half

– 2 1/2 cups shredded cheddar cheese (high quality aged cheddar recommended)

Instructions

1-Preheat oven to 325ยฐF and lightly grease an 8-inch square baking dish.

2-Cook macaroni to al dente according to package instructions. Drain and set aside.

3-In a medium saucepan, melt butter over medium heat. Stir in flour, salt, and pepper, whisking for 2 minutes to form a roux.

4-Gradually add milk and half and half, stirring constantly. Cook over medium-low heat until thickened to gravy consistency, about 5-7 minutes. Remove from heat.

5-Stir in 1 cup shredded cheddar cheese until just melted.

6-Add cooked macaroni to cheese sauce and toss to coat.

7-Pour half the macaroni mixture into prepared baking dish, sprinkle with 1/2 cup cheese, add remaining macaroni, and top with remaining cheese.

8-Bake for 15-20 minutes until cheese is melted on top.
