– 1 cup diced carrots

– 3 cups shredded cheddar cheese (divided use: 1 cup in mixture, 2 cups on top)

– 1 cup sour cream

– 1 tablespoon dried parsley (optional garnish)

Instructions

1-Preheat your oven to 400Β°F and prepare ingredients by chopping vegetables.

2-In a skillet, brown 1 pound lean ground beef with Β½ cup diced yellow onion and 2 garlic cloves over medium heat.

3-Stir in 2 tablespoons all-purpose flour, then add 1 cup beef broth, seasonings, 1 cup shredded cheddar cheese, and 1 cup sour cream.

4-Mix in 3 cups diced russet potatoes and 1 cup diced carrots, then transfer to a baking dish and top with the remaining 2 cups shredded cheddar cheese.

5-Bake covered for 30-35 minutes until tender, then uncover and garnish with 1 tablespoon dried parsley if desired.
