Ingredients
– 1 cup oat flour
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 4 tablespoons coconut sugar or brown sugar
– 4 tablespoons white sugar or additional coconut sugar
– 1/3 cup chocolate chips (or more if desired)
– 1/3 cup chopped nuts (optional)
– 1 teaspoon pure vanilla extract
– 2 tablespoons vegetable oil or melted coconut oil
– 3 to 5 tablespoons milk of choice
Instructions
1-Preheat oven: Preheat oven to 380Β°F (approximately 193Β°C). In a large bowl, thoroughly combine oat flour, baking soda, salt, sugars, and chocolate chips. Add vanilla extract, oil, and milk, mixing everything together to form one large dough ball.
2-Roll dough: Break the dough into smaller portions and roll them into cookie dough balls. For softer cookies, refrigerate the dough balls until chilled; otherwise, bake them right away. Place the dough balls on a tray and bake on the center rack for 9 minutes.
3-Cooling and finishing: Remove the cookies when theyβre slightly undercooked; theyβll firm up as they cool for 10 to 15 minutes. If the cookies donβt spread during baking, press them down with a spoon right after taking them out. You can even freeze the dough balls and bake them later after thawing for fresh treats anytime.
