4 cups fresh green beans, cut
1 can (10 ¾ oz) cream of mushroom soup (alternatives: cream of chicken, asparagus, bacon, or celery soup)
½ cup cream or ⅓ cup milk (used both in the soup mixture and potatoes)
½ cup crispy fried onions (some reserved for topping)
1 tablespoon soy sauce (or Worcestershire sauce)
1 pound ground beef (alternatives: ground chicken, turkey, pork, or sausage)
1 small onion, finely chopped
3–4 medium-large russet potatoes, unpeeled (alternatives: yellow, white, or red potatoes)
¼ cup butter, melted
¼ cup grated Parmesan cheese (can substitute Romano or Asiago)
1 cup shredded cheese for topping (cheddar, mozzarella, Colby, jack, Havarti, Swiss, fontina, provolone, or blends)
Instructions
1-Boil the 4 cups of fresh green beans for about 5 minutes until they’re bright green, then drain them well.
2-Mix the 1 can (10 ¾ oz) of cream of mushroom soup with 1 tablespoon soy sauce, ½ cup crispy fried onions, and ½ cup cream or ⅓ cup milk. Stir in the green beans until everything is combined.
3-Spread this mixture evenly in a greased 9×9 inch casserole dish.
4-Brown the 1 pound of ground beef with the finely chopped small onion in a skillet over medium heat until fully cooked; drain any excess fat. Then, layer this over the green beans and press it down lightly.
5-Boil 3-4 medium-large russet potatoes for about 15 minutes until tender, drain them, and return to the pot. Add ¼ cup melted butter, ½ cup cream or ⅓ cup milk, and ¼ cup grated Parmesan cheese, then mash until smooth.
6-Spread the mashed potatoes over the meat layer and smooth it out for an even top.
7-Sprinkle the remaining crispy fried onions and 1 cup shredded cheese on top.
8-Bake uncovered for 45 minutes, then broil for about 5 minutes to brown the top.
9-Let it cool slightly before serving hot.
