πŸ₯ Grilled Mango Pineapple Chicken offers a delicious tropical twist with sweet mango-pineapple salsa that brightens up the meal.
πŸ”₯ The quick marinating and grilling make it a perfect flavorful dish for busy weeknights or outdoor gatherings.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

– 1 Β½ pounds thin-sliced boneless skinless chicken breasts

– 8 ounces mango-pineapple salsa

– β…“ cup lime juice

– ΒΌ cup olive oil (or vegetable/canola oil as alternatives)

– Β½ teaspoon freshly ground black pepper, or to taste

– 1 large yellow bell pepper, sliced into Β½-inch wide strips

– 2 tablespoons olive oil

– 1 teaspoon kosher salt, or to taste

– Β½ teaspoon freshly ground black pepper, or to taste

– 4 ounces mango-pineapple salsa for garnish, or as desired

– Β½ cup diced mango, frozen thawed and drained preferred

– β…“ cup pineapple tidbits, frozen thawed and drained preferred

– 2 to 4 tablespoons fresh cilantro, optional for garnish

Instructions

1-Start: Start by prepping your ingredients, and you’ll have a mouthwatering meal in no time.

2-Prepare the chicken or tofu: First, trim and pat dry your chicken breasts for that perfect sear. For a plant-based twist, press and slice tofu instead it’s a neat hack I use when friends visit.

3-Make the marinade: Then, blend together mango chunks, pineapple slices, olive oil, chili powder, salt, and pepper to make your marinade, adjusting as needed for your tastes.

4-Marinate and grill: Let that chicken soak in the marinade for at least 30 minutes to let those flavors sink in overnight is even BETTER for that extra punch. Once your grill is preheated to medium-high, about 400Β°F, oil the grates to avoid any sticking drama. Place the marinated chicken on one side and grill for 6-7 minutes per side until it hits 165Β°F inside.

5-Grill the sides: Meanwhile, toss in those pineapple slices or veggies like bell peppers for a colorful side. Grill them for 2-3 minutes each side until they get that nice char.

6-Finish and serve: Finish by plating everything with fresh herbs and maybe a dash more salsa.

Notes

πŸ₯ Thinly sliced chicken breasts or tenders help cook chicken evenly and quickly, avoiding overcooked edges.
πŸ”₯ Use a grill basket for bell peppers to prevent falling and for easy stirring.
⏳ Marinate chicken overnight for fullest flavor, but even 30 to 60 minutes improves taste.
