– 1 3/4 cups plain Greek yogurt room temperature (2% preferred)

– 2/3 cup granulated sugar

– 3 large eggs

– 1 teaspoon vanilla extract

– 2 teaspoons lemon juice

– 1 1/2 cups total mixed berries (strawberries blueberries raspberries)

– 2 tablespoons lemon juice

– 1/2 tablespoon chia seeds (optional for thickening)

Instructions

1-Preheat oven to 350ยฐF and prepare the water bath.

2-Combine 1 1/2 cups graham cracker crumbs, 5 tablespoons melted butter, and 1 tablespoon sugar for the crust; press into the pan and bake for 8 minutes.

3-Beat 16 ounces cream cheese until smooth, then add 2/3 cup sugar, 1 3/4 cups Greek yogurt, 1 teaspoon vanilla extract, and 2 teaspoons lemon juice.

4-Add 3 large eggs one at a time on low speed.

5-Bake at 325ยฐF for 45-55 minutes until just set.

6-Let it cool in the oven for 1 hour, then refrigerate for at least 8 hours.
