Ingredients

2 lbs (about 900 g) ground beef (80% or 85% lean)

1 medium onion, finely chopped (about 1 cup)

1 teaspoon oil for sautéing

2 large eggs

3 garlic cloves, minced

2 tablespoons ketchup

3 tablespoons fresh parsley, finely chopped

3/4 cup panko breadcrumbs or gluten-free breadcrumbs

1/3 cup milk (can substitute with lactaid milk if needed)

1 teaspoon Italian seasoning (or to taste)

1 teaspoon salt

1/2 teaspoon ground black pepper

3/4 cup ketchup

1 1/2 teaspoons white vinegar (or lemon or lime juice)

2 tablespoons brown sugar

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Instructions

1-Preheat the oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper or foil.

2-Sauté the chopped onion in 1 teaspoon oil over medium heat until softened and golden (about 5 7 minutes). Transfer to a plate to cool.

3-In a large bowl, combine ground beef, sautéed onions, eggs, minced garlic, ketchup, parsley, breadcrumbs, milk, Italian seasoning, salt, and pepper. Mix gently to just combine.

4-Shape the mixture into a loaf approximately 8 inches long, 4 inches wide, and 3 inches tall on the prepared baking sheet.

5-Bake uncovered for 40 minutes.

6-Meanwhile, in a small bowl, mix together the glaze ingredients until combined.

7-Remove the meatloaf from the oven, spread the glaze evenly over the top, and return it to bake for an additional 20 minutes, or until the internal temperature reaches 160°F (165°F if using poultry).

8-Let the meatloaf rest for 10 15 minutes before slicing to allow juices to redistribute.
