๐Ÿ  Savor the delicious combination of roasted sweet potatoes with garlic, Parmesan, and fresh herbs for a flavorful and nutritious side dish.
๐ŸŒฟ This dish is easy to prepare and packed with vitamins, minerals, and protein, perfect for enhancing any meal.

  • Total Time: 45 minutes
  • Yield: 4-6 servings

Ingredients

– 2 1/2 lbs sweet potatoes, peeled if desired and diced into 1-inch cubes

– 3 tablespoons olive oil, plus extra for serving

– 3 to 4 cloves garlic, minced

– 1 1/2 tablespoons fresh thyme leaves, chopped

– 1 1/2 tablespoons fresh parsley leaves, chopped

– 1/3 cup finely grated Parmesan cheese

– Melted butter or more olive oil (optional)

– Salt and pepper to taste

Instructions

1-Getting started with this recipe is straightforward and fun. First, preheat your oven to 400 degrees F to ensure even roasting. Wash, peel, and dice the 2 1/2 lbs sweet potatoes into 1-inch cubes for uniform cooking, which helps them turn out tender and flavorful.

2-Next, in a small bowl, mix 3 tablespoons olive oil with 3 to 4 cloves minced garlic and 1 1/2 tablespoons chopped fresh thyme leaves. Place the diced sweet potatoes on a baking sheet, pour the olive oil mixture over them, and season with salt and pepper to taste.

3-Toss everything to coat evenly and spread the potatoes into a single layer to avoid overcrowding. Roast for about 30 minutes, tossing once halfway through for even browning. If you want a golden finish, broil for 1 to 2 minutes at the end.

4-Once done, remove from the oven, drizzle with additional olive oil or melted butter if using, and toss again. Sprinkle with 1/3 cup finely grated Parmesan cheese; if you prefer it fully melted, broil for another minute. Finally, add 1 1/2 tablespoons chopped fresh parsley leaves and serve immediately for the best taste and texture.
