6 slices bacon, diced
1/3 cup onion, finely diced
4 cups corn kernels (fresh or thawed frozen; canned not recommended)
1 teaspoon sugar

Instructions
1-Cook the diced bacon in a large pan over medium-high heat until it’s browned and crisp, then remove it with a slotted spoon and drain on paper towels.
2-Drain most of the bacon grease from the pan, leaving about 1 tablespoon to keep that rich flavor.
3-Add the diced onion to the pan and cook for 2-3 minutes until it turns translucent, stirring to prevent burning.
4-Stir in the corn kernels, sugar, salt, and pepper, then cook for 8-10 minutes, occasionally stirring, until the corn caramelizes and gets those nice browned edges.
5-Mix the cooked bacon back into the pan with the corn mixture for a perfect blend of textures.
6-Top it all with sliced chives and serve right away for the best taste.
