๐Ÿง€ Feta Spring Flatbreads combine creamy feta and fresh herbs in a soft, flavorful dough that’s perfect for a light meal or snack.
๐ŸŒฟ The crispy crust and bright mint sauce create an irresistible balance, making these flatbreads wonderful for spring gatherings or quick bites.

  • Total Time: 40 minutes
  • Yield: 4 flatbreads

Ingredients

– 200g self-raising flour

– 170g Greek yoghurt

– 100g crumbled feta cheese

– 2 tablespoons cream cheese

– A handful of finely chopped fresh mint leaves

– 100g spinach, wilted and drained

– 2 garlic cloves, minced

– 1 teaspoon black pepper

– 1 tablespoon mint sauce

– 1 tablespoon olive oil

Instructions

1-Starting with the Dough: Begin by mixing 200g self-raising flour and 170g Greek yoghurt in a large bowl. Knead it for about 5 minutes until you get a soft, bouncy dough that feels just right. Once done, cover it with cling film and let it rest, which gives it time to develop that perfect texture we all love.

2-Prepping the Filling: Next, combine the filling ingredients in a bowl: 100g crumbled feta cheese, 2 tablespoons cream cheese, a handful of finely chopped fresh mint leaves, 100g spinach that’s been wilted and drained, 2 minced garlic cloves, and 1 teaspoon black pepper. Mix them thoroughly so every bite is packed with flavor.

3-Shaping and Cooking: After the dough has rested, briefly knead it and divide it into four equal pieces. Flatten each one to about ยพ inch thick, add a tablespoon of filling in the center, then gather the edges to seal and gently flatten to ยฝ inch thickness. This technique keeps the filling inside while creating that crispy crust. Heat a dry non-stick pan over medium-high heat and cook each flatbread for 3-5 minutes per side until golden brown. Covering the pan with a lid helps ensure the inside cooks fully, making for a perfectly tender center. Once done, they’re ready to enjoy with the sauce.

4-Finishing Touches: For the sauce, whisk together 1 tablespoon mint sauce and 1 tablespoon olive oil, then drizzle it over the warm flatbreads when serving. The whole process is straightforward yet rewarding, and it’s one of those recipes that gets better with practice.
