  • Total Time: 28 minutes
  • Yield: 12 cups

Ingredients

– 2 medium-size overripe bananas, mashed

– 1/3 cup almond butter or peanut butter

– 1/3 cup pure maple syrup

– 2 large eggs

– 1/2 cup milk (plant based or dairy)

– 1 teaspoon vanilla extract

– 1 3/4 cups old fashioned oats

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 1/3 cup unsweetened cocoa powder

– 1 generous cup chocolate chips

Instructions

1-First, preheat your oven to 350ยฐF and grease a 12-count muffin tin to prevent sticking.

2-In a large bowl, whisk together the mashed banana, almond butter or peanut butter, maple syrup, eggs, milk, and vanilla extract until everything blends smoothly.

3-Next, stir in the old fashioned oats, baking powder, salt, and cocoa powder, mixing well to combine all the dry elements with the wet ones.

4-Then, fold in the chocolate chips gently to keep their shape intact.

5-Divide the batter evenly among the 12 muffin cups, and if you like, top with extra chocolate chips for an extra treat.

6-Bake for 16 to 20 minutes until the edges turn golden brown and the cups are cooked through.

7-Finally, let them cool in the pan on a wire rack for at least 20 minutes before removing and serving slightly warm.
