Ingredients

– 1 cup (227 g) unsalted butter, room temperature

– Β½ cup (100 g) granulated sugar

– ΒΌ teaspoon salt

– 1 Β½ teaspoons vanilla extract

– 1 egg

– 2 cups (284 g) all-purpose flour

– Granulated sugar for sprinkling

Instructions

1-Preheat the oven to 350Β°F (177Β°C) and line two baking sheets with parchment paper or silicone baking mats.

2-In a large bowl, beat 1 cup (227 g) of unsalted butter and Β½ cup (100 g) of granulated sugar on medium speed until fluffy, about 1 to 2 minutes.

3-Add ΒΌ teaspoon salt, 1 Β½ teaspoons vanilla extract, and 1 egg; beat for about 1 minute until combined.

4-Reduce the mixer speed to low and gradually add 2 cups (284 g) of all-purpose flour until mostly incorporated, then stir with a rubber spatula to fully combine; the dough will be thick.

5-Transfer the dough to a piping bag fitted with a large open star tip and pipe 2-inch circles onto the prepared baking sheets. Sprinkle with granulated sugar.

6-Bake one sheet at a time for 15 to 17 minutes, until the cookies are lightly golden.

7-Allow cookies to cool completely before serving or storing.
