Peel your 6 medium-large carrots and slice each one lengthwise into quarters for those flat sides that hold the cheese perfectly. In a big bowl, mix together the 2 tablespoons of extra virgin olive oil, 2 large garlic cloves (minced or grated), 2 teaspoons smoked paprika, 1 teaspoon cumin powder, ยฝ teaspoon chili powder or red pepper flakes, the handful of finely chopped fresh parsley, and a pinch of sea salt to whip up that flavorful marinade.
2-Next, toss the carrots in the marinade until they’re fully coated that’s where the magic starts! Sprinkle some of the 70 grams of freshly grated parmesan cheese on the bottom of a non-stick oven dish or baking sheet for extra crispiness. Dip the flat side of each carrot piece into the remaining parmesan, then lay them cheese side down in a single, even layer without any gaps. Pop them in the oven and roast for 20 to 25 minutes until the carrots are tender and cooked through.
3-Once they’re done, flip those carrots right away with a spatula to show off that crispy parmesan crust and serve them up hot! This method keeps everything from getting soggy, and it’s a hit for family dinners or quick snacks.
