1.5 pounds cod (or other white fish such as sea bass, halibut, snapper, or tilapia), cut into 2-inch cubes

1 pound shrimp, shelled and deveined

2 tablespoons lime juice, plus extra for seasoning

56 garlic cloves, minced

3 tablespoons finely minced ginger

ยฝ teaspoon freshly ground black pepper

2 tablespoons oil

1 large onion, sliced

1 medium red bell pepper, chopped or sliced

1 medium yellow bell pepper, chopped or sliced

1 medium orange bell pepper, chopped or sliced

2 large tomatoes, seeded and chopped

Salt to taste

1 can (13.5 oz/450 ml) coconut milk

1.5 cups fish stock (or substitute with chicken stock or water)

1 teaspoon red chili flakes (optional)

1/3 cup chopped cilantro

Instructions

1-First, prepare all ingredients by seasoning the seafood with salt, black pepper, lime juice, ginger, and half the garlic in a large bowl. Marinate in the refrigerator for about 30 minutes to let the flavors soak in.

2-Next, heat oil in a large pan over medium heat to start building the base of your stew.

3-Then, add onions, the remaining garlic, and bell peppers; stir frequently until softened, about 3-4 minutes, to release their natural sweetness.

4-After that, add half the tomatoes and the marinated seafood; cook for about one minute to blend the flavors.

5-Pour in coconut milk, fish stock, and chili flakes; simmer on low to medium heat, covered, until seafood is cooked through, about 8-10 minutes, and season with salt.

6-Finally, add the remaining tomatoes and cook for an additional minute, then garnish with extra lime juice and chopped cilantro before serving.
