50 grams unsalted butter (about 3.5 tablespoons)

½ cup (75 grams) flour

1 minced garlic clove

½ a small finely chopped brown onion

1 small diced carrot

½ finely chopped red bell pepper

1 small diced celery stick

2 cups (500 ml) low-sodium chicken stock or broth

3 cups (750 ml) milk of any fat percentage

½ teaspoon salt

¼ teaspoon garlic powder

¼ teaspoon onion powder

¼ teaspoon dried thyme

¼ teaspoon black pepper

¾ cup frozen peas

1 cup cooked chicken, diced or shredded

2 slices of white bread for croutons

Instructions

1-First, heat the olive oil in a pot and sauté the onion and garlic for 2 minutes until they’re soft and fragrant.

2-Then, add in the carrot, celery, and red bell pepper, cooking for another minute to bring out their colors and tastes.

3-Next, melt the unsalted butter into the mix, followed by stirring in the flour for about a minute to create a nice base.

4-Gradually pour in the chicken stock while stirring to blend everything smoothly, then add the milk and seasonings like salt, garlic powder, onion powder, thyme, and black pepper.

5-Finally, toss in the frozen peas and cooked chicken, letting it all simmer gently for 4 to 5 minutes until it thickens up. Stir occasionally and keep the heat low to avoid boiling. Once it’s ready, serve it hot with homemade croutons on top for extra crunch a quick way to elevate your meal. For the croutons, just cut 2 slices of white bread into cubes, spray with olive oil, sprinkle with salt, and bake at 180°C (350°F) for 5 minutes until golden.
