– 1/2 lb (225 g) penne pasta or any short pasta

– 15 oz (425 g) fire-roasted diced tomatoes with juices

– 2 cups (480 ml) chicken broth

– 2 oz (56 g) cream cheese, which can be substituted with heavy cream or half-and-half

– Olive oil for cooking

– Butter for cooking

– 3 sliced green onions for garnish

Instructions

1-First: coat 1 lb of cubed boneless, skinless chicken breasts with the homemade Cajun seasoning blend, which includes smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper, black pepper, and salt. Heat olive oil and butter in a skillet over medium heat, then sear the chicken until it’s browned and cooked through, about 5-7 minutes. This step locks in the juices and builds a flavorful base for the dish.

2-Once the chicken is done, add 1 diced yellow onion to the skillet and sautรฉ until it softens and becomes fragrant. Next, stir in 1/2 lb of penne pasta, 15 oz of fire-roasted diced tomatoes with their juices, and 2 cups of chicken broth. Let the mixture simmer until the pasta is tender and the sauce begins to thicken, which takes around 10-15 minutes.

3-Finally, reduce the heat and stir in 2 oz of cream cheese until it melts smoothly into the sauce, creating that creamy texture everyone loves. Garnish with 3 sliced green onions for a fresh finish.
