  • Total Time: 52 minutes

Ingredients

– 1 cup unsalted butter (melted until browned)

– 1 and 1/2 cups light brown sugar (packed)

– 1/2 cup granulated sugar

– 2 large eggs (at room temperature)

– 1 large egg yolk (at room temperature)

– 2 and 1/3 teaspoons pure vanilla extract

– 2 and 1/3 cups all-purpose flour

– 1 teaspoon baking soda

– 1 teaspoon ground cinnamon

– 1/2 teaspoon salt

– 1 and 3/4 cups old-fashioned oats (rolled oats)

– 3/4 cup sweetened flaked coconut (can use unsweetened)

– 1/2 cup pecans (roughly chopped; walnuts can be substituted)

– 12 ounces semi-sweet chocolate chips

– 1 teaspoon flaky sea salt (optional for topping)

Instructions

1-Whisk together the browned butter and both sugars until combined, which takes about 2 minutes for a creamy mix.

2-Add the eggs and egg yolk, whisking well, then stir in the vanilla extract to build that flavorful base.

3-In a separate bowl, whisk together the flour, baking soda, cinnamon, salt, oats, coconut, pecans, and chocolate chips until everything is evenly mixed.

4-Gently fold the dry ingredients into the wet ones until just combined; be careful not to overmix to keep the dough tender.

5-Scoop the dough into 2-inch balls and place them on the prepared baking sheets, leaving 2 inches between each for spreading.

6-Bake one sheet at a time for 12 minutes, or until the edges are golden brown and the centers are slightly soft watch closely for that best cowboy cookies recipe result!

7-Optionally, press extra chocolate chips and pecans onto the warm cookies and sprinkle with flaky sea salt for an extra pop of flavor.

8-Let the cookies cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
