Ingredients
– 1 cup (2 sticks) unsalted butter, melted for the batter
– 1 cup granulated sugar for the batter
– 2 large eggs for the batter
– 1 teaspoon vanilla extract for the batter
– 2 cups all-purpose flour for the batter
– 1 teaspoon baking soda for the batter
– 1 and 1/2 cups mashed ripe banana (about 4 bananas) for the batter
– 3 tablespoons unsalted butter, melted for the cinnamon sugar swirl
– 3 tablespoons granulated sugar for the cinnamon sugar swirl
– 3 tablespoons dark brown sugar for the cinnamon sugar swirl
– 2 tablespoons ground cinnamon for the cinnamon sugar swirl
– 6 thin slices of ripe banana for garnish
Instructions
1-In a separate bowl, mix the cinnamon sugar swirl ingredients until you get a thick consistency. If it’s too thick, add a little more melted butter; if too thin, hold back a bit to perfect that swirl.
2-Layer the batter and cinnamon sugar swirl in your loaf pan, alternating between the two and swirling with a knife after each layer for that signature look.
3-Top it off with the remaining batter and swirl, then place the banana slices down the center for a pretty garnish that makes your bread pop.
4-Bake on a baking sheet in the center of the oven for 60-70 minutes, covering with foil if the top browns too fast. Check for doneness with a toothpick it should come out with moist crumbs.
5-Let the bread cool in the pan for 30 minutes before moving it to a wire rack. This helps it set without falling apart.
