Ingredients
2 and 3/4 cups all-purpose flour
1/4 cup granulated sugar
1/2 teaspoon salt
3/4 cup whole milk
3 tablespoons unsalted butter
2 and 1/4 teaspoons instant yeast
1 large egg at room temperature
3 tablespoons unsalted butter (softened)
1/3 cup packed light or dark brown sugar
1 tablespoon ground cinnamon
4 ounces full-fat cream cheese (softened)
2 tablespoons unsalted butter
2/3 cup confectioners’ sugar
1 teaspoon pure vanilla extract
Instructions
1-Prepare the Dough: Start by mixing your dry ingredients in a large bowl to set a strong base for the dough. Then, warm the milk and butter together until the butter melts and the mixture hits about 110°F, whisk in the yeast until it’s fully dissolved, and combine it all with the dry mix plus the egg to form a soft dough.
2-Knead and Rest the Dough: Once mixed, knead the dough on a floured surface for 3-5 minutes until it’s smooth and elastic feel free to use a mixer if that makes it easier. Let the dough rest in a greased bowl for 10 minutes, then roll it out into a 14×8-inch rectangle. Spread the softened butter evenly over it and sprinkle on that sweet cinnamon-sugar mix for the filling.
3-Roll, Slice, and Proof: Roll the dough into a 14-inch log, slice it into 10-12 even pieces, and pop them into a greased 9- or 10-inch pan. Let them rise in a warm spot for 60-90 minutes until they’ve doubled in size.
4-Bake the Rolls: Preheat your oven to 375°F and bake for 24-27 minutes until they’re lightly browned and smell irresistible.
5-Prepare and Apply the Icing: For the finishing touch, whip up the icing by beating the softened cream cheese until smooth, then stir in the butter, confectioners’ sugar, and vanilla extract. Spread it over the warm rolls right away so it melts into every swirl.
