– 210 grams plain or all-purpose flour

– 1 cup peeled and roughly chopped red apple (about 1 large apple)

– 2 large eggs

– 1 teaspoon vanilla extract

– 120 ml vegetable or flavorless oil

– 120 ml Greek yogurt

– 50 grams granulated sugar

– 1 teaspoon ground cinnamon

– 1 tablespoon melted butter

– 30 grams icing or powdered sugar (sifted)

– 1 to 2 tablespoons milk

Instructions

1-Preheat and Prep: First, preheat your oven to 180Β°C (350Β°F) standard or 160Β°C (320Β°F) fan-forced and grease and line an 8-inch cake pan with baking or parchment paper.

2-Mix Dry Ingredients: In a bowl, combine the flour, baking powder, baking soda, salt, sugar, and chopped apple briefly.

3-Mix Wet Ingredients: In another bowl, whisk the eggs, vanilla extract, oil, and Greek yogurt until the yolks are broken up.

4-Combine and Bake: Gently mix the wet ingredients into the dry ingredients with a wooden spoon until just combined, avoiding overmixing. Pour the batter into the prepared pan.

5-Prepare Cinnamon Topping and Bake: To prepare the cinnamon topping, mix the sugar, cinnamon, and melted butter until the mixture resembles wet sand, then sprinkle it over the batter. Bake for 30 to 35 minutes or until a skewer inserted into the center comes out clean. Let the cake cool on a wire rack.

6-Glaze the Cake: For the glaze, mix the icing sugar with 1 tablespoon of milk until smooth, adding more milk if the glaze is too thick, then drizzle it over the cooled cake. This step adds a sweet finish that makes the cake even more irresistible.
