๐Ÿ This Chicken Zucchini Pasta Skillet is a quick and satisfying dinner packed with protein and fresh vegetables.
๐Ÿ‹ The combination of lemon juice, fresh basil, and Parmesan cheese brings bright, vibrant flavors to your weeknight meal.

  • Total Time: 20 minutes
  • Yield: 6 servings

Ingredients

– 12 oz Italian style chicken sausages, cut into discs (pre-cooked)

– 1 cup diced onion

– 2 tsp minced garlic

– 1/4 tsp crushed red pepper flakes (optional)

– 4 cups chicken broth

– 8 oz uncooked small pasta (Radiatore recommended, but any small pasta works)

– 2 cups chopped zucchini

– 2 tbsp lemon juice

– 1/4 cup grated Parmesan cheese, divided

– 1 cup halved grape tomatoes

– 1/3 cup fresh chopped basil

– 1 tsp salt

– 1/2 tsp black pepper

– Olive oil for cooking

Instructions

1-First Step: Heat olive oil in a large skillet over medium heat. Add the chicken sausages and diced onion, cooking until the sausages are browned and the onions turn tender. This step builds a tasty base that pulls everything together nicely!

2-Second Step: Season with salt, black pepper, crushed red pepper flakes if you’re using them, and minced garlic. Cook for about 1 minute until everything smells amazing and aromatic. Don’t rush this it’s what makes the dish pop!

3-Third Step: Pour in the chicken broth, scraping the bottom of the pan to get all those delicious browned bits. Bring it to a boil, which helps blend the flavors just right. Now you’re set for the next part!

4-Fourth Step: Add the uncooked pasta and stir frequently for about 10 minutes until it’s mostly tender. This keeps the pasta from sticking and ensures it’s cooked perfectly. For a twist on pasta dishes, think about how this compares to other favorites.

5-Fifth Step: Toss in the chopped zucchini and cook for 3 more minutes until it’s tender and most of the broth is absorbed. Zucchini adds that fresh crunch, so keep an eye on it to avoid overcooking!

6-Sixth Step: Stir in the lemon juice, 3 tbsp of Parmesan cheese, and halved grape tomatoes until everything is combined and warmed through. The lemon adds a zesty kick that brightens the whole dish. Finally, remove from heat and garnish with fresh chopped basil and the remaining Parmesan cheese. Serve it up hot for the best taste!
