Instructions
1-First, soak and cook the 8 ounces of flat rice noodles al dente as per package instructions.
2-Prepare the chicken by pounding and chopping it into bite-sized pieces, then season and cook as described.
3-Make the sauce by combining all the listed ingredients in a bowl.
4-Cook the eggs and veggies in the pan before adding back the chicken and sauce.
5-Toss in the noodles and final greens, then serve immediately.
