Ingredients

– 8 ounces flat rice noodles (or substitute with fettuccine noodles)

– 1 large boneless skinless chicken breast for main protein

– Salt and pepper to taste

– 2 eggs

– 1 cup fresh bean sprouts

– β…“ cup sliced green onions

– ΒΌ cup sliced white onions

– β…“ cup roughly chopped cilantro

– Optional: peanuts for garnish

– ΒΌ cup ketchup

– 2 tablespoons fish sauce

– 2 tablespoons sugar

– 1 teaspoon minced garlic

– 1 teaspoon peanut butter

– Juice of 1 lime

– Β½ teaspoon crushed red pepper flakes

– 1 teaspoon soy sauce

Instructions

1-First, soak and cook the 8 ounces of flat rice noodles al dente as per package instructions.

2-Prepare the chicken by pounding and chopping it into bite-sized pieces, then season and cook as described.

3-Make the sauce by combining all the listed ingredients in a bowl.

4-Cook the eggs and veggies in the pan before adding back the chicken and sauce.

5-Toss in the noodles and final greens, then serve immediately.
