– 3-4 large carrots, diced

– 10 cups chicken stock or broth

– 1/2 teaspoon freshly ground black pepper, to taste
– 1/8 teaspoon rosemary, or more to taste
– 1/8 teaspoon thyme
– 1/8 teaspoon crushed red pepper
– 1 cup fresh homemade egg noodles, or 4 cups dry egg noodles, farfalle, or other bite-size pasta
– 3 cups rotisserie chicken meat
– 1 teaspoon chicken bouillon granules or powder (optional, for extra flavor)
Instructions
1-Melt the butter in a large stock pot over medium-high heat and sautΓ© the diced celery and carrots for 3 minutes.
2-Add the minced garlic and cook for another 30 seconds until it becomes fragrant.
3-Pour in the chicken stock or broth to the pot and season with the rosemary, thyme, crushed red pepper, salt, and pepper. Taste and adjust as needed, and if you want extra flavor, add the chicken bouillon granules or powder.
4-Bring the broth to a boil, then add the noodles whether itβs fresh homemade egg noodles or dry pasta and cook until they are just al dente. Remember, if youβre using dry noodles, donβt overcook them as theyβll soften more off the heat.
5-Stir in the shredded rotisserie chicken meat, give the soup another taste, and adjust seasonings if necessary.
6-Serve it hot and enjoy the comforting warmth.
