Ingredients

– Unsalted butter for greasing the pan

– 2½ cups (12 oz) cherries, stemmed and pitted (use sweet varieties like Bing or Rainier for best results; tart cherries can add a tangier flavor)

– 3 large eggs

– 1 cup whole or 2% milk

– ¼ cup heavy cream

– ½ cup plus 2 tablespoons granulated sugar, divided

– ½ cup all-purpose flour, spooned and leveled

– ¼ teaspoon salt

– 1 teaspoon vanilla extract

– ⅛ teaspoon almond extract

– Confectioners’ sugar optional, for dusting

Instructions

1-Preheat the oven: Preheat the oven to 375°F and position the rack in the middle.

2-Melt butter: Melt butter in a 10-inch cast-iron or nonstick ovenproof skillet over medium heat, swirling to coat the sides; alternatively, melt butter directly in a 2-quart baking dish placed in the oven.

3-Arrange cherries: Evenly arrange the pitted cherries in the skillet or baking dish.

4-Blend batter: In a blender, combine eggs, milk, heavy cream, ½ cup sugar, flour, salt, vanilla extract, and almond extract. Blend on medium speed until smooth.

5-Pour batter: Pour the batter over the cherries.

6-Bake first phase: Bake for 20 minutes.

7-Add sugar: Remove from the oven and sprinkle the remaining 2 tablespoons of sugar evenly on top.

8-Bake second phase: Return to the oven and bake for an additional 25 to 30 minutes until golden brown and just set. The clafoutis should still wiggle slightly but a toothpick or knife inserted should come out clean.

9-Cool and serve: Allow to cool on a rack for 30 minutes, dust with confectioners’ sugar if desired, and serve.
